Assyrtiko finds its ‘home’ on the island of Santorini, but now successful plantings have emerged across Greece. Most winemakers agree that it is a relatively neutral grape in character but perfectly transmits the essence of the site where it grows. In Santorini, the proximity to the ocean and the volcanic soil gives a salinity and intense smoke note. Here, high up in the limestone mountain sides of Aigialeia, Assyrtiko gives an elegant wine, with minerality, a hint of light chalky tannin, and notes of citrus and alpine flowers.
