On the nose, it presents aromas of red apples and yellow plums, leading to a chalky texture on the palate. The wine is aged on its fine lees in a combination of old oak barrels and amphora for six months, resulting in a nicely layered finish.
Domaine de Cocagne, managed by Clarisse Godet and Benjamin Louf, practices organic farming on flint and clay soils, contributing to the wine's mineral depth. Their minimal intervention approach in the cellar, including fermentation with native yeasts and no filtration or sulfur additions, allows the purity of the Chenin Blanc to shine through.
