Interesting stuff from Cadiz here.
The wine is produced from Palomino, the grape used to make sherry, but in a dry, fresh and unfortified stye.
Most of the wine is cool fermented is stainless steel giving citrus and mineral notes, while a small portion is fermented in oak to add some texture and a little richness to the palate.
