Emmanuel Haget, a former geophysical engineer, transitioned to winemaking after training with Jacky and Véronique Ripoche of Domaine des Noades. In 2016, he took over part of the vineyards of Philippe Gourdon, a pioneer of biodynamic viticulture in Saumur. Today, his estate spans 3.8 hectares across five plots near Puy-Notre-Dame, predominantly featuring clay-limestone soils. Haget employs biodynamic farming practices and minimal intervention winemaking, allowing indigenous yeasts to drive fermentation and tailoring maceration lengths to each grape variety.
