Fresh and savoury with hints of stone fruit and a saline edge.
Heres an interesting one for the curious amongst us (and great wine on its own terms, I might add!). This is a non-fortified sherry, aka a wine from Jerez. Usually, the wines are fortified bringing the alcohol up to 15%. Here the wines are fermented naturally bringing the wine to a lovely and refreshing 10.5%. Whereas most wines from the Jerez are blended from vines across the region and take their character from where they are aged, the hope with this wine is theres a more direct sense of place with the best vineyards of the region. The wine is still aged under flor, so you get the yeasty, nutty character usually associated with Fino and Manzinilla, but theres also a real sense of chalky minerality and a saline edge.
