This is a super-interesting sparkler from Penedes, Spain - It's a classic Cava but with the the added twist of aging under flor yeast, and the addition of Palo Cortado and Amontillado which gives it a subtle complexity. Savoury, complex, nutty and saline with a lovely creamy bubbles.
