The grapes are sourced from two very, very old vineyards. After hand harvesting a portion of the grapes are left to dry in the sun, the wine is then transferred to tinaja/qvevri and 500L barrels for ageing. Finally, a light layer of flor is allowed to develop.
The wine is citrussy, nutty, savoury, and complex, with lots of freshness also and a distinct saline charter. Truly beguiling - one of our favourite wines of the year - absolutely unique and completely delicious.
